Eight out of ten restaurants I visit are disappointing. Demoralization is my stock in trade. But it is something I have grown so inured to that I can experience the pure joy of a great find. Such a gem is Nha-Que , a clean, bright little restaurant that serves some of the best Vietnamese food in Montpellier.

Nhà-Quê offers classic pho Hanoî, a sturdy broth loaded with rice stick noodles and crowned with paper-thin shavings of raw beef, which cook as the dish makes its way from the kitchen to the table, is as good a barometer of quality as I can imagine—Que Nha’s is the local exemplar. Bo-Bun cha Gio, grilled spring rolls on cold rice noodles,salad and beef with lemon grass sauce is also superb, as are all the other bun I sampled. Those watching their waistlines will be thrilled with these clean and healthy steamed dim sum, and those watching their pocketbooks will find much to cheer about. Most dishes offerings are between $8 , 9€50, and 15€.

I'll warn you now. Once you've tasted the gastronomic delights fashioned by the hands of this master craftsman, you'll never want to eat elsewhere ever again. Each delicious mouthful of this manna solicits pained looks of pleasure from everyone at the table. Entire conversations take place through arched eyebrows, shaken heads and simpering groans of submission to the chefs delicate art. You almost feel guilty when each succulent morceaux passes your quivering lips, for you know that pleasure this intense is usually sinful. But don't worry, food lover, for your soul is safe. As is your wallet. I hope you've understood that the Nha qué is a rare gem of a restaurant that you should try as soon as you can.
