For all those who think that Toulouse should be visited only for its famous pink walls, there is another specialty that is really worth a stop: the famous cassoulet from the South West of France! And to try this special dish, only one address in town: Le Colombier.This place used to be called «Au vrai Cassoulet de Castelnaudary» and what is now Le Colombier opened up in 1874. It is now a must-stop in a region where the gourmet offer is rich and varied. In fact its celebrity dates back to when Gérard Zasso, adventurer and gourmet, took over; he used to run the kitchens on the France cruise boat, and thanks to him Le Colombier has now got this special personality for which it is famous in the region. The interior is country-inspired and pretty and it tells a lot about the privileged relation between this place and its history. The lights are subdued, the stones visible and the frescos you find on the walls seem to come right from an old French book, Gargantua or Pantagruel.
